Uses: Star anise has many uses, including as a spice, in medicine, and in perfumery:

• Culinary

  The seed pods are used as a spice in Chinese cooking, and are a key ingredient in five-spice powder. They can be used to flavor vegetables, meat, curries, and confectionaries. Whole pods can be simmered in soups, stews, and braised meats. Ground star anise can also be used, but it loses potency over time.

• Medicinal

  Star anise is used in cough medicines and is considered to be useful for flatulence, spasmodic, and other conditions. However, there is no good scientific evidence to support these uses, and star anise tea may be contaminated with poisonous Japanese star anise.

• Perfumery

  The essential oil from star anise fruits is used to flavor perfumes, liqueurs, and candies.

• Pharmaceutical

  Star anise is a major source of shikimic acid, which is used to make oseltamivir (Tamiflu), an anti-influenza drug.
